Actually, I do this all the time in Toronto, with my left over fries/mashed potatoes. I really love potatoes.
Step 1:
Last night’s french fries. Mash them up.
Add cheese, onions, whatever (if you want).
Step 2:
Add egg(s) and mix until the consistency is between oatmeal and regular pancake batter (this has two).
Step 3:
Cook in a buttered/pre-heated pan at about medium-high.
Like regular pancakes, when the edges look/are cooked and there are bubbles escaping the tops, flip ‘em!
Step 4:
YUM.
(Not pictured: four slices of bacon, and probably a whole mango that I’m about to eat. Fresh air does crazy things for your appetite.)
